Those Curried Potato Everything Cakes aka Poor Man’s Pakora look amazing! I love leftovers and eat them quite often, but I enjoy them again and again for what they are/were–I never think to turn them into something else. I love it! Can’t wait to see what I come up with

This is a challenge I appreciate. Cooking for one, there are almost always leftovers of some kind, and I find it fun to recombine them in creative ways. Much more fun than trekking to the grocery store and back every day, though I see your point about freshness and getting exactly what you’re craving. You’ve got a nice mix going on in this post, lots of flavour and variety!

Ha! Thanks! I just meant that I decided not to go the the grocery store and not to eat out–to commit myself to using up what was in the fridge, specifically, to eat/use the food we’d already prepared.
