Guacamole

This is plain ol’ guacamole. We eat this with everything mexican, and about half the things not. It’s easy!

Guacamole

  • 2 avocados
  • 1⁄8 cup onion, diced
  • 1⁄8 cup, tomato, diced
  • 1 – 2 cloves garlic, diced or pressed
  • 1 squeeze lime juice, (go easy on this, you can always add more)
  • 1 small bunch of cilantro, diced (optional)
  • 1 jalapeno pepper, diced – with or without seeds (optional)
  • salt, to taste

Cut the avocadoes into halves and remove the pits. Use a tablespoon to scoop out the scrummy avocado into a medium-sized mixing bowl. Add in the remaining ingredients and mash mash mash! Use a pastry masher, potato masher, and/or fork (iff you’re a dork). That’s it. You have no reason not to be eating this.

We slowly “dipped” our way into the Vegan world with this recipe. It’s great! Only suggestion, don’t scrap out the seeds in the pepper with your finger…not my best move.

[…] So. We scratch the Mexican itch by making one of several different feasts, almost all involving guacamole, (homemade) refried beans, and then some variation on tacos, burritos, enchiladas, tostadas, […]

Chile rellenos are NEVER made from jaepalno peppers, but from either poblano or Anaheim chiles which are milder in flavor.Chiles Rellenos: Chiles rellenos are made of Chile Poblano (Ancho) or Anaheim chiles, with skins removed, dipped in batter, stuffed with cheese or meat and covered with lightly spiced red sauce. Blistering fresh chiles is one of the tricks of the Mexican food Cooking.Tips for filling Chiles RellenosFillings can be made ahead of time and refrigerated, then brought to room temperature before stuffing chiles.Fillings should be at room temperature or slightly chilled. Rinse the chiles.2. Preheat your oven to broil.3. Place the chiles in a 9 x 14 baking dish and place on the top shelf of your oven.4. Watch and listen closely. When the skins start to make popping sounds and to char and turn black in places, take the chiles out and flip them over. Be sure and use a potholder so you don’t burn your hands!5. When both sides are fairly evenly charred, remove them from the oven.6. Wrap each chile in a moist paper towel or place in a sealed plastic bag to steam.7. After a few minutes, check them. Once the skin comes off easily, peel each chile.8. Cut a slit almost the full length of each chile. Make a small t across the top, by the stem. Pull out fibers and seeds (this is where the heat is) and replace with a slice of cheese. You can set these aside, for a few minutes or a few hours if you put them in the refrigerator.9. Whip the egg whites at high speed with an electric mixer, until stiff peaks have formed.10. Heat the oil in a skillet until a drop of water sizzles when dropped into the pan.11. Beat the egg yolks with one tablespoon flour and salt. Mix the yolks into egg whites and stir until you have a thick paste.12. Roll the chiles in 1/4 cup flour and dip each one in the egg batter. Coat evenly. Fry, seam side down on both sides until golden brown. Place on paper towels to drain.13. Meanwhile, heat the salsa in a medium saucepan (either one or some of each). Place one or two Rellenos on each plate and pour salsa over them. Serve them immediately and brace yourself for major compliments! This web site offers a video demonstrating how to make them.Buena suerte!!Manuel

Too many great ones this week. I’ll simply give a tie for first between Secret Home Party and Tiny Tim Overdrive with The Motion Uke doing a hard charge in second.SHP is an example of a band I dream about being in. At least 7 or 8 people doing all sorts of noises together. Alas, those sorts almost always have to be hobby bands nowadays and the work I’m doing trying to pull a living together seems to get in the way.

Yeah, unfortunately, this method bypasses the duplicate notification. I would move the original contacts to a new folder, run the script then move the old ones back – that should trigger the warning if any are duplicates.

Thank you for this post. I know I often feel like the day is full of so many hours to fill and I get a bit overwhelmed most mornings . I anticipate the slew of tantrums and the meals to clean up after, and it’s difficult to return to the wonder and merriment of having a beautiful day ahead. I think an alternate post title for this could be: Opportunities for Joy. I think if I focus more on the process with them (clay making or egg dying, for example) and less on the set-up/clean-up, I imagine the experience being more enjoyable for all![]

Charlemagne,That’s a difficult question, and it’s really too early to say. I’m still in the data-gathering mode — and probably will be right up until the moment the star and crescent fly over Whitehall or the RÃ¥dhuset in Stockholm. But one thing is certain: these events will not proceed linearly. Things will not continue indefinitely on their present trajectory. The Swedes or the Dutch may suddenly become very efficient and effective at de-Islamizing their countries. It will take something really nasty to make that happen, though. That’s what El Ingles is referring to when he mentions the “discontinuity”.

"The left is good at pouting and not very good at organizing to get things done."Hmm, sometimes, sometimes not. That same left which is dismissed as unrealistic or pouty was rather important at getting Obama the Democratic nomination and the Presidency. So if the President wants to tack right over the next three years, good luck to him. But in 2012 he may find that a few people on the "whiny pouty left" may not be so quick to believe in hope and change..
